If you ever have the chance to try Ube (pronounced U-bae, if I understand correctly), give it a try. The other night I went with my brothers to a special ice cream shop and found Ube flavored ice cream. I HAD to get some to try!
You see, this flavor, which I understand to have first been championed in the Philippines, is based upon the Okinawa Purple (a.k.a. Hawaiian Purple) sweet potato.
A day earlier I had purchased some roots of a local sweet potato, in the Foodland supermarket in Kihei, Maui. Though not technically Okinawa Purple, they appear to be some kind of cross with that variety. They have the same flavor and texture, which is amazing. Some have really dark purple flesh and some have violet colored flesh.
