I believe George Washington Carver is one of the most unsung American heroes. He was truly a great man and, a genius to boot! Here's an interesting resource, a copy of his bulletin on making Sweet Potato Flour.

And I thought I was being 'modern'! Here are some of mine from last year. I mix it in all kinds of things. This is a great way to use small roots that are are not quite big enough for baking or regular ways of use.

I don't peel mine...I just scrub them good, then slice, raw, peel and all--dehydrate, then grind. Its a good way to use the undersized roots--no waste.

The blue/purple in foods (anthocyanin) is very beneficial, but sometimes the mind expects foods to be a certain color and if this bothers you, then use white or orange potatoes.
