Yum! Autumn leaves and rainy day made me hungry for sweet potato fries today. I like to cut them round and use different colored potatoes. I used some of my smallest undersized roots--just in case they hadn't cured enough I wouldn't waste as much. They were delicious! (And left-overs great as munchie-snacks).

All I do is scrub them good, leave skin on and slice them into rounds...(I like rounds because it distributes the skin a little on each one). I spray them just a little with canola oil and cook in air cooker. I do three rounds of 6 minutes (shake or turn over in between rounds) at 400 degrees. You can use up little tiny roots that are too small for anything else this way...just little 'nibbles'.
