Thanksgiving is when I generally try cooking my first roots from the year's crop. Yesterday we didn't have company coming, so I didn't cook up very many. Nevertheless, I was really looking forward to trying a few. I chose Okinawa as the primary variety, just because I knew my wife and daughter would be very happy with them, plus... I wanted to see how they were. Thanksgiving is more than enough time for some varieties to sweeten up in storage while others, take a bit longer to come into their prime.
So how was Okinawa? It was very very good. I do suspect it might make a bit more sugar by Christmas but still, it was excellent.
I also chose one of my precious roots from 2021's Seedling #1 . You might recall that this one was bicolor when I tried it last year. It had a light violet colored core and white outer flesh. Well, the root I chose was all white.
There was not violet color in it at all. Additionally it was pretty dry and not at all sweet. I suspect this is because it needs more time in storage to sweeten up. Grand Asia, a probable parent of this one, is like this. What I wonder is whether the violet color will appear with time or if somehow it has disappeared, at least in some of the roots. Time will tell.
